I was in the culinary academy throughout high school and actually got scholarships for culinary colleges after placing 3rd in the state competition (ProStart) but never went due to anxiety. Regretting it now, I am trying to learn as much as I can about food on my own while documenting and sharing my experiences here! Food excites me! It always has, and to anyone with high anxiety like me that doesn't want to work cooking in a restaurant, I say still go to school to learn the knowledge just for the sake of knowledge. This knowledge can help you become an expert and you can still build a career in the food world without being in a high pressure kitchen environment. I was foolish and chose not to go because I didn't want to get a job working in a high pressure kitchen.
